1. 2 lbs asparagus
  2. 2 blocks tofu
  3. 1 tsp vegetarian oyster sauce
  4. 1 tsp sesame oil
  5. 1 Tbsp olive oil
  6. 8 cups water


 Preparation and Cooking

     Cut asparagus into 3" pieces, wash and let them dry. Cut tofu into 1" squares and let them dry. In a pan, boil enough water to be able to submerge the asparagus.  Turn off heat after the water is boiled.  Submerge the asparagus in boil water for about 2 minutes then remove and let them dry. Using a stir-fry pan or a wok, heat up with olive oil until white smoke appears. Fry the tofu pieces until the skins are golden. Next, add the asparagus and tofu squares, mix well with oyster sauce, sesame oil, and continue to cook for another 1 minute. A healthy stir-fry asparagus with tofu dish is ready to be served.
