Ingredients

  1. 1/2 lb fresh Oyster mushrooms

  2. 1 block tofu

  3. 1 Tbsp minced lemon grass

  4. 1 tsp mince garlic

  5. 1 tsp curry powder

  6. 1 tsp sugar

  7. 1 Tbsp soy sauce

  8. 2 Tbsp vegetarian Oyster sauce

  9. 2 Tbsp Olive oil, divided

 

Preparation and Cooking

     Wash and dry the oyster mushrooms. In the microwave, cook the tofu block for 4 minutes.  Let the tofu cool down and cut it into 1" squares. In a stir-fry pan, heat up the olive oil. Add the tofu squares and fry until the skins are golden. Place the golden tofu squares on paper towels to soak the oil off the tofus. Next, heat up the stir-fry pan again until white smoke appears, add garlic, lemon grass and fry until fragrant. Add mushrooms, tofu squares, and the rest of the ingredient to the pan, mix well. Simmer the mixture until all liquid are dried up.
